What happens when you mix milk and lemon juice?

Our class was recently treated to a tour of the Commonwealth Kitchen Incubator. First, we got to watch Susan make scones from scratch for The Commonwealth Café. Next, Sean took us on a tour where we saw industrial sized ovens, Blast Chillers and a bottling machine, just to name a few. Finally, we had a business luncheon at the MVR. There we discussed the different businesses that use the incubator and the potential for jobs. What happens when you mix milk and lemon juice? The acidity makes the milk curdle. Tasha, from our class, knew the answer to the question posed by Susan, as she was making her scones.
